{"id":1531,"date":"2020-10-01T21:25:14","date_gmt":"2020-10-02T01:25:14","guid":{"rendered":"http:\/\/deridder.ca\/blog\/?p=1531"},"modified":"2020-10-01T21:25:14","modified_gmt":"2020-10-02T01:25:14","slug":"moroccan-couscous","status":"publish","type":"post","link":"https:\/\/deridder.ca\/blog\/?p=1531","title":{"rendered":"Moroccan couscous"},"content":{"rendered":"<p>2 tablespoons olive oil<br \/>\n1 medium red onion chopped<br \/>\n1 yellow bell pepper chopped<br \/>\n1 carrot chopped into cubes<br \/>\n2 cloves garlic minced<br \/>\nsalt &amp; pepper to taste<br \/>\n\u00bd teaspoon paprika<br \/>\n\u00bd teaspoon ground coriander<br \/>\n\u00bc teaspoon turmeric<br \/>\n\u00bd teaspoon celery salt<br \/>\n\u00bd teaspoon ground cumin<br \/>\n\u215b teaspoon ground cinnamon<br \/>\ncayenne pepper optional, to taste<br \/>\n1 cup frozen peas<br \/>\n14 oz chickpeas (garbanzo beans) one can, drained<br \/>\n6 Peppadew Piquante peppers chopped, mild or hot<br \/>\n1\u00bd cups chicken stock or vegetable stock<br \/>\nA good handful fresh parsley chopped<br \/>\n1 cup instant couscous<\/p>\n<p>Instructions<br \/>\nIn a medium-size skillet heat the oil over medium heat.<br \/>\nAdd red onion, yellow pepper, and carrot saut\u00e9 10-15 minutes or until brown and all the vegetables are your desired tenderness<br \/>\nAdd the garlic, saut\u00e9 another minute.<br \/>\nMix in the salt &amp; pepper, paprika, ground coriander, turmeric, celery salt, cumin ground cinnamon, and cayenne pepper (if using). Stir-fry until fragrant (about a minute).<br \/>\nAdd the frozen peas and cook briefly. Stir in the piquante peppers and chickpeas. Followed by the stock, scraping any brown bits from the bottom of the pan.<br \/>\nAdd the chopped parsley and stir in the couscous. Remove from heat and let stand 5 minutes or until liquid is absorbed.
